The recipes with Orvietan

Biscuits with raisin and Orvietan


500 g of flour 00
125 g of seed oil
150 g of sugar
200 g of raisin
100 ml of Orvietan
50 ml of sweet white wine
8 g of baking powder
a pinch of salt



Soak the raisins in the wine and Orvietan then mix the flour with the baking powder, salt and sugar. Now you can add the raisins, Orvietan and Oil and mix all the ingredients until the dough is smooth and elastic.


Shape the dough into small sitcks and roll into rings, place them in the baking pan and sprinkle each biscuit with caster.


Bake at 180 Celsius for 30 minutes.

Chocolates with Orvietan

INGREDIENTs for 20 pieces

170 g of dark chocolate

(70 g dark at 74%, 70 g dark at 85%, 30 g dark at 99%)

250 ml of Orvietan

and egg yolk

150 g of sugare



Melt the chocolate a bain-marie to obtain a creamy consistency.


Prepar a cream with Orvietan, the sugar and the egg yolk. Leti t cool.


Pour the chocolate in the molds and let it solidify. When it’s cold, using a sac a poche, fill with the cream. Close the chocolate with another piece of chocolate and let it cool.

Parfait with Orvietan


5 egg yolks
100 g of sugar
250 g of mascarpone
500 ml of liquid cream
20 ml of water
100 ml of  Orvietan



In a saucepan let melt the sugar with water until reaches a boil.

Lightly beat the eggs and add the melted sugar and whisk  quickly whit electric whips until frothy.

Now you can add the mascarpone and be sure to blend well everything together with also the Orvietan.


Whip the cream and gently mix it with the rest using a spatula. Pour into molds.


Put in the freezer at least 2 hours before serving.
